  • Baking mixes are becoming increasingly popular among consumers, mainly because of their convenience (no need to buy everything separately, weigh out ingredients, etc). They also guarantee good results every time, unlike baking from scratch. A consumer does not need prior knowledge of baking to use them.

     

  • People’s changing food habits and ingredient awareness means they’re looking for organic sweet treats that they can make themselves.

     

  • There are baking mixes for almost every type of baked good, including bread, pizza, cookies, biscuits, cakes and more. For each type of good, there’s scope to create sugar-free, dairy-free, low-fat, vegan, organic and diabetic-friendly varieties.

     

  • The vegan market is thriving globally, so this is an especially lucrative market. Vegan bakes are notoriously hard to get right, so buying a pre-made mix guarantees success.

     

  • Baking mixes are becoming a popular gifting item during big holidays, like Christmas or Thanksgiving. They’re a cheaper, eco-friendly alternative to non-edible products.

     

  • Numerous celebrities are creating their own baking mixes, including Chrissy Teigen and Dolly Parton. Dolly Parton’s are specifically marketed for the holidays as Christmas cookies.

💡 WHAT’S IN STORE FOR BAKING MIXES?

  • The Baking Mixes category as a whole is growing steadily – with a CAGR of 5.2% globally. But vegan baking mixes saw a total global market value of almost $1 billion ($960 million) in 2022 and this is expected to reach $1.6 billion by 2033. It’s an ever-expanding market and one that certainly has scope for more products for vegan/dairy-free consumers.

     

 

  • More consumers are interested in what exactly is in their food. For this reason, we expect an increase in demand for organic and natural baking mixes with very few ingredients. ‘Healthy’ alternatives may also become more popular too, such as added-protein cakes or reduced-fat cookies.

 

  • A larger variety of flavours – flavour is almost unlimited these days, and people will try anything that sounds weird and wonderful. Experimenting with flavour could be the key to creating a baking mix that suits every taste.

  1. Celebrity collaborations – with big brands, potentially from well-known chefs or even ex-Bake Off contestants so consumers can make their favourite bakes at home.

  2. Increased interest in Europe & Asia – There’s a lot of competition in the baking mixes sector in North America, but other countries are yet to catch up. We predict an increase in interest across European countries and Asia. While Eastern countries consume less bread than Western, their own baking mix equivalents could include their traditional bakes, such as Japanese butter cookies (hato sabure) or Indian milk balls (gulab jamun).

  3. More gluten-free options – around 1 in 10 people in the UK have a gluten-free diet, whether because of an intolerance or by choice. But this isn’t reflected by the number of gluten-free baking mixes on the market. There will likely be more gluten-free baking mixes, including cakes, breads and more, coming to the market over the next few years, particularly as the global gluten-free foods market is estimated at $6.3bn in 2022.

🌈  3 OPPORTUNITIES

  1. Baking mixes and decoration kits combined – many consumers don’t want to just make a product – they want to make it look beautiful too, especially if they’re taking it to an event or it’s an occasion item. A combination kit means they can do both. 

  2. Baking mixes specifically for children – these could include healthy snacks that parents can make for the week ahead. Stored in an airtight container, they could be added to a lunchbox each day or taken on the go.

  3. Healthy baking mixes – made with whole grains, reduced sugar, spirulina, fewer additives and artificial flavourings, or almond/coconut flour instead of traditional wheat flour.
